I'll be spending the long weekend in beautiful Narooma with my girlfriend's family.

Sunshine, beers, food and wine will be plentiful. I will be trying to keep myself from eating too much chocolate though.

Do you get a break in between them at least?

Half a day in the middle. Just finished my 2nd day shift 06:30 to 18:30. Now the trick is to stay up as late as possible tonight, some XBox and Netflix should do the trick, then sleep most of the day tomorrow. Then I do my two night shifts 18:30 to 06:30

Did a slow roasted pork leg today, with apple cider gravy and beautiful crispy crackling.

Washed it down with a Sparkling Shiraz from Anderson Wines in Rutherglen.

 

Absolutely perfect.

One of my many alcoholic uncles used to be the Shire President of Rutherglen. All the local wineries would give him cases of bottles to give away wherever he went to promote the area. I think he actually gave a bottle away once.

How slow is slow? Are we talking like 12 hours of slow, or less than a handfull?

 

5 hours.

Yeah, if I normally do a slow roast pork I usually use a shoulder. Sometimes I use pork belly.

I only used the leg this time because we won it in a meat tray. Was a boneless leg roll. Turned out great. Was able to get the skin nice and crispy for perfect crackling.
